For the dough mix together the eggs, salt and flour.

Cover the dough with a clean cloth and leave it to rest for 1/2 hrs.

Peel and wash the potatoes, cut into small cubes and boil it in salted water until tender.

Mash the potatoes while still warm, then mix it with the cheese, egg yolk, and fried bacon. Season to taste.

Roll the dough about 2 mm thick and using a round cookie cutter (or a glass) cut circles from the dough.

Add the filling to one side of the circle.

Fold the dough in half over the filling, making a half-moon shape. Pinch the edges together and using a fork seal the edges of the ravioli. Make sure to press down firmly to keep the filling inside.

Place the ravioli in boiling, salted water (add a tablespoon oil, too) and cook it in 2-3 mins.

And there you have it: a home-made, delicious ravioli.
