Asparagus cream soup recipe: Preparing the Asparagus cream soup is simple! First, wash the asparagus, peel them and cut into 1 inch sized pieces, then cook in slightly salted water until tender. When ready, put in a bowl and put the asparagus water away for now.
Melt the butter in a pan, add flour and make a white roux.
Combine the rough with asparagus water and vegetable broth, stir thorough.
Mix yolk with sour cream and add to the soup. Turn off the heat!
Season it with salt, sugar, pepper, nutmeg and lemon juice, then stir thorough.
Finally, add asparagus.
