Cheese-filled potato medallions recipe: First, add potatoes to a pot, bring water to boiling, when boiled crush the potatoes. Season with salt and pepper to taste.
Combine cheese, flour and breadcrumbs, stir thorough.
Add eggs, parsley, knead thorough.
Cut mozzarella into four pieces and put them on top of one other.
Make balls from the potato mixture and push the cheese in the middle.
Cover the cheese with a small layer of potatoes and form medallions from the balls.
Flatten the medallions a little.
Then bathe in the breadcrumbs.
Roast in some oil.
Serve with spiced sour cream!
