The Stuffed potato roll in cheese crust is a simple, filling one pot meal that’s prepared in only a short amount of time!
Spread grated cheese in a pan lined with parchment.
Place the potato slices on top of the cheese, add salt.
Cook on 360 degrees F for 30 minutes.
For the meat filling, first braise onions in oil until tender.
Add minced meat and cook until the meat gets white.
Add diced tomatoes, parsley, paprika powder, salt and pepper. Cook for a few minutes.
Combine spinach, salt and garlic, cook until tender.
Add ricotta.
Spread the spinach mixture over the fried potatoes.
Spread the meat filling on top.
Dust with mozzarella.
Roll up.
Sprinkle with grated cheese.
Cook on 400 degrees F for 25 minutes.
